    • ¼ cup dried cranberries or grapes, halved (optional)
    • Salt and black pepper, to taste

    Instructions

    1. If poaching chicken: Place chicken breasts in a pot, cover with water or broth, and simmer gently for 15–18 minutes, until it reaches 165°F (74°C) internally. Let cool, then shred or dice.
    2. In a large bowl, whisk together mayonnaise, Dijon mustard, and lemon juice.
    3. Add the chicken, celery, red onion, and cranberries or grapes if using.
    4. Fold everything together until evenly coated. Avoid overmixing, which can make the chicken mushy.
    5. Season with salt and pepper to taste.
    6. Refrigerate for at least 30 minutes before serving to let the flavors meld.

    • Poach the chicken gently, don’t boil it. A rolling boil toughens the meat; a gentle simmer keeps it tender.
    • Dice the chicken evenly for consistent texture in every bite.
    • Chill before serving. The flavor improves after resting in the fridge.
