    Restaurant-style salsa has a smooth-but-textured consistency that’s hard to replicate at home unless you know the trick: fire-roasted canned tomatoes and short, controlled pulses in the blender instead of a full purée.

    Ingredients

    Makes about 3 cups.

    • 1 (28 oz) can fire-roasted diced tomatoes — the roasted flavor is what gives this its restaurant-style depth without needing to char fresh tomatoes yourself.
    • ½ white onion, roughly chopped
    • 2 cloves garlic
    • 1–2 jalapeños, seeded for less heat, left in for more
    • ½ cup fresh cilantro leaves
    • 1 tbsp fresh lime juice
    • ½ tsp ground cumin
    • Salt, to taste

    Instructions

    1. Add tomatoes, onion, garlic, and jalapeño to a food processor or blender.
    2. Pulse 6–8 times, checking consistency after each pulse. You want small, even chunks — not a smooth purée.
    3. Add cilantro, lime juice, cumin, and a pinch of salt. Pulse 2–3 more times to combine.
    4. Taste and adjust salt or lime juice as needed.
    5. Refrigerate for at least 30 minutes before serving to let the flavors meld.

    Tips

    • Pulse, don’t blend continuously. Continuous blending turns salsa into a watery purée instead of a textured dip.
    • Let it chill before serving. The flavor improves noticeably after 30 minutes to an hour in the fridge.
    • Adjust heat by controlling jalapeño seeds and ribs, which hold most of the spiciness.

    Common Mistakes

    • Overblending, which results in thin, watery salsa instead of a proper dip consistency.
    • Using fresh tomatoes out of season, which often lack flavor compared to good canned fire-roasted tomatoes.
    • Skipping the resting time, serving it immediately before the flavors have a chance to combine.

    Substitutions and Variations

    • Fresh tomato version: Substitute 6–8 fresh Roma tomatoes for the canned, roasting them under the broiler first for similar depth.
    • Mango salsa: Add 1 cup diced mango for a sweet-spicy variation.
    • Milder version: Omit jalapeños entirely and add a diced bell pepper instead.

    Storage

    Refrigerate in an airtight container for up to 5 days. Not recommended for freezing, as the texture becomes watery after thawing.
